SPICED PORK SKEWERS WITH HONEY GLAZE

500g pork fillets
2 cloves garlic, crushed
2 teaspoons cumin seeds
1/2 teaspoon ground coriander
1/4 teaspoon ground paprika
2 teaspoons olive oil

HONEY GLAZE
1/2 cup orange juice
2 tablespoons honey
2 tablespoons barbecue sauce
2 tablespoons creamy mustard

Cut pork into 3cm cubes, combine with garlic, cumin, coriander, paprika and oil. Thread pork onto skewers. Cook skewers, in batches, in an oiled, heated grill pan 5 minutes or until browned and cooked through, turning occasionally. Serve with honey glaze.

HONEY GLAZE: Combine all ingredients in a small saucepan, stir over heat until boiling, reduce heat to low, simmer for 5 minutes or until thickened.

NOTE: Soak bamboo skewers in water for at least 1 hour before threading the meat onto them to prevent the skewers burning.

Serves 4.
