ROAST PORK WITH LEMON AND OLIVES

1 tablespoon olive oil
400g pork fillet
3 slices lemon
350g pickling onions, peeled
2 cloves garlic, crushed
2 cups chicken stock
1 tablespoon lemon thyme leaves
60g green olives

Preheat oven to 400°F. Heat oil in a baking dish, cook pork over high heat for 2 minutes on each side or until browned; remove. Cook lemon for 2 minutes on each side or until browned; remove. Cook onions and garlic for 3 minutes or until browned. Add lemon, stock and thyme.

Remove from heat, transfer to oven, bake for 15 minutes. Add pork and olives to baking dish, cook for 10 minutes (for medium pork) or until cooked as desired.

HINT: To peel the onions easily, place them in a bowl, cover with boiling water, stand 5 minutes, drain, peel.

Serves 4.
