ROAST
PORK WITH LEMON AND OLIVES
1 tablespoon
olive oil
400g pork fillet
3 slices lemon
350g pickling onions, peeled
2 cloves garlic, crushed
2 cups chicken stock
1 tablespoon lemon thyme leaves
60g green olives
Preheat
oven to 400°F. Heat oil in a baking
dish, cook pork over high heat for 2
minutes on each side or until browned;
remove. Cook lemon for 2 minutes on each
side or until browned; remove. Cook onions
and garlic for 3 minutes or until browned.
Add lemon, stock and thyme. |

Remove from heat,
transfer to oven, bake for 15 minutes. Add
pork and olives to baking dish, cook for 10
minutes (for medium pork) or until cooked as
desired.
HINT: To peel
the onions easily, place them in a bowl, cover
with boiling water, stand 5 minutes, drain,
peel.
Serves 4.
