TORTELLINI ALFREDO WITH ROASTED PEPPERS

Take advantage of ready-to-use ingredients, such as fresh filled pasta, Alfredo sauce, and roasted peppers, to speed up this full-flavored meal.

1 9-ounce package refrigerated meat-or cheese-filled tortellini
1 4-ounce jar roasted red sweet peppers
1/3 cup refrigerated light Alfredo sauce
1/2 cup shredded fresh basil
1/4 to 1/2 teaspoon coarsely ground pepper

Prepare tortellini according to package directions; drain. Drain sweet peppers and cut into 1/2-inch-wide strips. Heat Alfredo sauce over low heat in a large saucepan. Cook and stir just until bubbling, about 5 minutes. Add cooked tortellini. Reduce heat and add sweet peppers. Simmer for 5 minutes, stirring often.

Before serving, stir in half of the basil. Divide pasta mixture among three plates. Top each serving with ground pepper and remaining basil.
