HERB COATED CHICKEN

Preparation time: 20 minutes | Cooking time: 30 minutes

1 cup stale breadcrumbs
1 clove garlic, crushed
1/2 teaspoon Cajun seasoning
1 teaspoon finely chopped fresh thyme
1 teaspoon finely chopped fresh oregano
2 teaspoons finely chopped fresh basil
Cooking-oil spray
6 chicken tenderloins (270 g)
1/3 cup low-fat plain yogurt

Combine breadcrumbs, garlic, seasoning and herbs in medium bowl.

Lightly spray oven tray with cooking-oil spray. Coat chicken in yogurt, then breadcrumb mixture; place on prepared tray. Cook chicken in moderate oven for about 30 minutes or until lightly browned and cooked through.

Serve chicken with tomato, cucumber and snow pea sprout salad with freshly squeezed lemon juice, if desired.

Serves 2.

Per serving: 9.7g fat; 350 calories.
