SALT AND FIVE SPICE CHICKEN

400 g chicken pieces
2 tablespoons lemon juice
1 tablespoon chili oil
Pinch of Chinese five spice powder
1 tablespoon sea salt
1 teaspoon five spice powder, extra

Place the chicken pieces in a bowl with the lemon, chili oil and the pinch of five spice powder and allow to stand for 5 minutes.

Preheat oven to 400°F. Then heat a large frying pan over high heat. Add the chicken pieces, skin-side down, and cook for 2 minutes on each side or until crisp and golden. Place the chicken on a baking tray and bake in the oven for 8-10 minutes or until cooked through.

Combine the salt and extra five spice powder and serve in small piles with the chicken. To serve, dip small pieces of the chicken in the salt and five spice mixture and serve with rice and greens.
