PARMESAN CRUSTED CHICKEN

2 chicken breast fillets
2 egg whites, lightly beaten
1 cup grated parmesan cheese
Cracked black pepper
2 tablespoons oil
2 ripe tomatoes, sliced
2 tablespoons shredded basil
Balsamic vinegar and olive oil to serve

Cut each chicken fillet into 2 thin, flat pieces. Dip each piece in the egg white and then press the chicken in the combined parmesan and pepper.

Heat the oil over medium-high heat and add the chicken pieces. Cook for 1-2 minutes on each side or until the chicken is golden and cooked through.

To serve, place tomato and basil on serving plates and top with balsamic and olive oil then the slices of chicken. Serve with lemon wedges and bread.
