PARMESAN
CRUSTED CHICKEN
2
chicken breast fillets
2 egg whites, lightly beaten
1 cup grated parmesan cheese
Cracked black pepper
2 tablespoons oil
2 ripe tomatoes, sliced
2 tablespoons shredded basil
Balsamic vinegar and olive oil to serve
Cut
each chicken fillet into 2 thin, flat pieces.
Dip each piece in the egg white and then
press the chicken in the combined parmesan
and pepper.
Heat
the oil over medium-high heat and add the
chicken pieces. Cook for 1-2 minutes on
each side or until the chicken is golden
and cooked through.
