SPICED ROASTED CHICKEN WITH CORN SEASONING

1.5kg chicken
2 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon Mexican-style chili powder

CORN SEASONING
1 medium onion, finely chopped
2 cloves garlic, crushed
310g can corn kernels, drained
1 cup stale breadcrumbs
2 tablespoons chopped fresh coriander leaves
2 teaspoons grated lime rind
2 tablespoons lime juice

Rinse chicken under cold water, pat dry inside and out. Fill both cavities with corn seasoning, secure openings with toothpicks. Tie legs of chicken together, tuck wings under. Place chicken on wire rack in baking dish.

Combine spices and spread mixture over chicken. Loosely cover chicken with lightly oiled foil; bake in 350°F oven 1 1/4 hours. Remove foil, bake a further 30 minutes or until chicken is well browned and tender. Serve immediately.

CORN SEASONING: Heat lightly oiled pan, cook onion and garlic, stirring, until onion is soft. Combine onion mixture with remaining ingredients in medium bowl.

Serves 6.

Per serving: 12.6g fat, 302 calories.
