HERBED BASMATI RICE

2 teaspoons butter or stick margarine
1 garlic clove, minced
1/2 cup uncooked basmati rice
1 cup water
1/4 teaspoon salt
2 tablespoons thinly sliced green onion tops
2 teaspoons minced fresh or 1/2 teaspoon dried basil
1 teaspoon minced fresh or 1/4 teaspoon dried thyme
2 tablespoons (1/2 ounce) grated fresh Parmesan cheese
Thyme sprigs (optional)

Melt butter in a small saucepan over medium heat. Add garlic; sauté 1 minute. Add rice; stir well. Add water and salt; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed. Stir in onions, basil, and minced thyme. Sprinkle with cheese; garnish with thyme sprigs, if desired.

Serves 4.
