HAM,
AVOCADO AND ROASTED TOMATO TOAST
4
large egg tomatoes
1 tablespoon brown sugar
1 small red onion, sliced thinly
150 g shaved leg ham
4 thick slices vienna loaf
1/2 small avocado, sliced thinly
1 tablespoon shredded fresh basil leaves
Cut
tomatoes in half lengthways; place cut-side
up on oiled oven tray, sprinkle with sugar.
Bake tomato, uncovered, in very hot oven
15 minutes. Add onion; bake further 15 minutes
or until tomato is soft.
