DOUBLE-ONION PIZZA

4 teaspoons olive oil
3 red onions, halved and thinly sliced
3 yellow onions, halved and thinly sliced
2 cloves garlic, minced
1/2 teaspoon granulated sugar
1/4 teaspoon salt
1 teaspoon dried sage leaves, crumbled
1/4 teaspoon pepper
Nonstick cooking spray
1 pound purchased pizza dough
1/4 cup tomato paste
1/3 cup grated Parmesan cheese

In large nonstick skillet, over medium heat, heat 2 teaspoons of the oil. Add onions, garlic, sugar, salt, sage and pepper; cook, covered, 7 minutes, until onions are soft. Uncover and cook 5 minutes, stirring frequently, until golden brown.

Preheat oven to 500°F. Coat a 15-inch by 10-inch jelly-roll pan with nonstick cooking spray. Pat dough into the prepared pan, making several indentations in top of dough with fingers. Cover loosely; let stand 15 minutes.

In small bowl, combine tomato paste, 3 tablespoons of water and remaining 2 teaspoons oil; brush mixture over dough. Bake on bottom shelf for 10 minutes. Remove; spread evenly with onion mixture and Parmesan. Return to oven; bake 7 minutes, until dough is crisp and onions are hot.

Serves 6.

Per serving: About 312 calories, 11 g proteins, 51 g carbohydrates, 8 g fat, 21% calories from fat, 4 mg cholesterol, 606 mg sodium, 4 g fiber.
