WOK-FRIED SALTED CHILI CRAB

3 green crabs
2 tablespoons oil
2 red chilies, chopped
1 tablespoon sea salt
1 tablespoon cracked black pepper
Lime wedges

Remove limbs and claws from crabs. Cut body portions in half and clean well. Crack claws with the back of a knife or cleaver. Heat a wok over high heat. Add oil, chilies, salt and pepper and cook for 1 minute. Add crab pieces and stir fry for 5-7 minutes or until shells change color and flesh is white and tender.

Serve crabs with lime wedges and eat with your fingers, so the spices on the shell flavor the crab meat.

Serves 4.

NOTE : If the crab claws are large, lightly steam them before adding them to spices in the wok.
