SALMON AND HERB SOUFFLES

Preparation time: 10 minutes | Cooking time: 25 minutes

210 g can salmon, drained
1 tablespoon finely chopped fresh chives
1 tablespoon finely chopped fresh parsley
Pinch cayenne pepper
1 tablespoon margarine
1 tablespoon plain flour
1/2 cup skim milk
2 egg whites

Grease two souffle dishes (1 cup capacity). Combine salmon, herbs and pepper in large bowl; mix well.

Heat margarine in medium saucepan; stir in flour. Cook until bubbling; remove from heat. Gradually stir in milk; stir over heat until sauce boils and thickens. Stir sauce into salmon mixture.

Beat egg whites until soft peaks form; fold into salmon mixture. Spoon mixture into prepared dishes.

Beat in moderate oven for about 20 minutes or until risen and well browned.

Serves 2.

Per serving: 14.3g fat; 257 calories.
