TARTARE
OF SALMON WITH PRESERVED LEMON COUSCOUS
750g salmon
fillet (preferably skinless)
2 tablespoons finely chopped chives
1 teaspoon ground sea salt
1/2 teaspoon ground black pepper
1 cup chicken stock
2 teaspoons raw sugar
1 cup instant couscous
1/4 cup finely sliced preserved lemon
1 teaspoon salmon roe
DRESSING
1 teaspoon raw sugar
3 teaspoons pink peppercorns, drained
2 teaspoons chopped fresh chervil
1/3 cup chicken stock
2 teaspoons lime juice |

Remove and discard
any skin and bones from salmon, dice salmon
finely. Combine in small bowl with chives,
salt and black pepper. Bring stock and sugar
to boil in small pan, add to couscous in medium
bowl; cover, stand 5 minutes or until liquid
is absorbed. Fluff with fork to separate grains,
stir in lemon, cool. Top salmon with roe; drizzle
with dressing. Serve with couscous, and a green
salad with crusty bread, if desired.
DRESSING: Combine
all ingredients in jar; shake well.
Serves 4.
