SHRIMP
CURRY
500g uncooked
king shrimps
2 tablespoons tikka masala paste
2 tablespoons mango chutney
1/3 cup vegetable stock
1/3 cup low-fat plain yogurt
1/2 cup chopped fresh coriander
1 tablespoon lime juice
Peel and
devein shrimps. Heat paste and chutney
in a nonstick frying pan, add shrimp,
stir over medium heat until just cooked
through. Stir in stock, yogurt, coriander
and juice, stir until heated through.
