ASPARAGUS WITH TOFU AND BALSAMIC BUTTER

1 tablespoon oil
2 cloves garlic, sliced
60 g butter
3 tablespoons balsamic vinegar
3 tablespoons water
1 bunch asparagus, trimmed and halved
Cracked black pepper
4 thick slices firm silken tofu
1 tablespoon thyme sprigs

Heat oil in a frying pan over medium heat. Add garlic and cook for 1 minute. Add butter, balsamic and water to the pan and cook for 1 minute.

Add the asparagus and pepper to the pan and cook for 4 minutes or until tender. Place asparagus on serving plates. Add the tofu and thyme to the pan and cook for 30 seconds on each side or until heated through. Place the tofu on top of the asparagus and serve with the balsamic butter.

Serves 2.
