FRESH-PEAR
CHUTNEY
Serve
with pork or poultry.
1
cup chopped red onion
1/3 cup packed brown sugar
1/4 cup currants
1/4 cup rice vinegar
1/2 teaspoon crushed red pepper
1/2 teaspoon minced peeled fresh ginger
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
3 cups chopped peeled pear
Combine
the first 8 ingredients in a small saucepan,
and bring to a boil. Cover, reduce heat,
and simmer for 5 minutes. Remove from heat;
cool for 10 minutes. Place in an airtight
container, and stir in pear. Seal and chill.
Makes
3 cups.
