BROWN
RICE SALAD
You
will need to cook approximately 2/3 cup
brown rice for this recipe.
500
g small cooked shrimps
2 cups cooked brown rice
1 medium red bell pepper, chopped finely
3 green onions, sliced finely
2 trimmed celery sticks, chopped finely
2 tablespoons lemon juice
2 tablespoons light olive oil
2 tablespoons cream
2 tablespoons finely chopped fresh chives
1 teaspoon sugar
Shell
and devein shrimps; chop.

shrimps in large bowl with rice, bell pepper,
onion, celery and combined remaining ingredients;
toss gently to combine.
