WARM
PASTA SALAD WITH MUSTARD MAYONNAISE

cup dehydrated sun-dried tomatoes
250 g pasta
2/3 cup low-fat mayonnaise
2 tablespoons seeded mustard
1 tablespoon lemon juice
2 cloves garlic, crushed
2 tablespoons hot water
250 g sliced leg ham
200 g baby rocket leaves
2 small red onions, sliced finely
1/4 cup black olives, seeded, sliced coarsely
Place
tomato in small heatproof bowl, cover with
boiling water, stand about 15 minutes or
until softened, drain. Slice tomato thinly.
Meanwhile,
cook pasta in large pan of boiling water,
uncovered, until just tender; drain. Cover
to keep warm.

Combine
mayonnaise, mustard, juice, garlic and water in
small bowl; mix well.
Cut
ham thinly, combine with pasta, tomato, mustard
mayonnaise, rocket, onion and olives in bowl;
mix gently.
Serves
