GREEN SALAD WITH ASIAN DRESSING

1/2 Chinese cabbage, sliced thickly
2 cups bean sprouts, trimmed
1 cup snow pea sprouts
300g snow pea, halved diagonally
1 small yellow bell pepper, cut into thin strips
1/3 cup fresh coriander leaves
1/3 cup fresh mint leaves
1/3 cup roasted peanuts

ASIAN DRESSING
1/4 cup rice vinegar
1 1/2 tablespoons canola oil
2 tablespoons mirin
1 tablespoon light soy sauce
1 teaspoon sesame oil

 

Combine all ingredients in a large bowl. Add dressing; toss well.

DRESSING: Combine all ingredients in a jar, shake well.

Serves 4.

NOTE: This salad can be served as a main course or as an accompaniment. For a main course, it is great tossed with sliced Chinese barbecued pork, shredded barbecued chicken or sliced, cooked beef or lamb.

Per serving: 14.4g fat, 223 calories.
