SPICED
CARROT SALAD
4 large
carrots
1 clove garlic, crushed
1/2 teaspoon sweet paprika
1/2 teaspoon ground cumin
2 birdseye chillies, seeded, chopped
2 tablespoons lemon juice
2 teaspoons olive oil
1/4 teaspoon sugar
2 tablespoons chopped fresh coriander leaves
Cut carrots
into long, thin strips; boil, steam or
microwave until just tender. Meanwhile,
combine garlic, paprika, cumin, chillies,
juice, oil and sugar into jar; shake
well. Combine carrots with dressing and
coriander in large bowl while hot; mix
gently. Serve warm or cold. |
