BEEF,
AVOCADO AND WHITE BEAN SALAD
2 teaspoons
ground black pepper
600g piece beef fillet
100g baby rocket leaves
2 x 240g cans cannellini beans, drained
2 teaspoons fresh lemon thyme leaves
1 medium avocado, thinly sliced
100g fresh garlic chives
1 clove garlic, crushed
1 teaspoon raw sugar
1 tablespoon lemon juice
1/4 cup chicken stock
Press pepper
onto beef. Heat oiled nonstick pan, cook
beef, turning until browned all over.
Place beef in baking dish, bake in hot
oven about 10 minutes or until cooked
as desired. Stand beef 5 minutes before
slicing. |
