LEMON PEPPER MAYONNAISE

Preparation time: 5 minutes

1/2 cup low-fat mayonnaise
2 teaspoons canned green peppercorns, drained, crushed
1 teaspoon finely grated lemon rind
2 teaspoons lemon juice
1/2 teaspoon sugar

Combine all ingredients in small bowl; mix well.

Makes 2/3 cup.

Per tablespoon: 2.1g fat; 35 calories.

STORE: Dressing can be made one week ahead and refrigerated, covered.
