THAI COCONUT SAUCE

This is a multipurpose sauce, ideal as an accompaniment to grilled or baked meats, chicken, fish and seafood.

2/3 cup light coconut cream
1/2 cup water
1 teaspoon grated lime rind
2 teaspoons lime juice
2 teaspoons grated fresh ginger
1 tablespoon chopped lemon grass
1 tablespoon chopped fresh mint
4 coriander roots, chopped
2 tablespoons chopped fresh coriander leaves
1 tablespoon sweet chili sauce
2 teaspoons fish sauce

Combine all ingredients in a blender or food processor, blend until finely chopped. Refrigerate sauce for at least 1 hour before serving.

Serves 6.

Per serving: 2.4g fat, 36 calories.
