ASPARAGUS WITH SWEET SAKE AND GINGER

2 teaspoons oil
2 tablespoons shredded ginger
4 shallots chopped
1/2 cup sweet sake or mirin
2 tablespoons light soy sauce
1 tablespoon oyster sauce
500 g fresh asparagus
1 tablespoon black sesame seeds
Pickled ginger to serve

Heat oil in a wok or frypan over medium heat. Add ginger and shallots and stir fry for 2 minutes. Add sake, soy sauce and oyster sauce to pan and cook for 2 minutes. 

Add asparagus to pan and stir fry for 3-4 minutes or until asparagus is bright in colour. Stir through sesame seeds. Serve in deep bowls with pickled ginger.

Serves 4.
