STIR-FRIED
BEANS WITH LEMON AND CASHEWS
1
tablespoon butter
1/2 cup unsalted cashew nuts, chopped
200 g green beans trimmed
150 g snake beans halved
150 g yellow beans trimmed
1/3 cup lemon juice
2 tablespoons palm or brown sugar
1 tablespoon light soy sauce
2 tablespoons mint leaves
Heat
butter in a frypan or wok over medium heat.
Add cashews to pan and stir fry for 2 minutes.
Add
beans to pan and stir fry for 3 minutes
or until beans are crisp but tender.
