HONEY-GLAZED
BEETROOT
8 medium
beetroot, trimmed
3 oranges
20g butter
2 teaspoons cornflour
1/4 cup honey
Preheat
oven to 400°F. Place unpeeled beetroot
in a baking dish, bake for 45 minutes
or until tender, allow to cool. Peel
beetroot, cut into wedges. Peel the rind
(not the pith) from one of the oranges,
cut into very fine strips. Juice the
oranges - you will need 2/3 cup. Melt
butter in a frying pan, stir in cornflour,
then orange juice and honey, stir over
heat until simmering. Add beetroot wedges,
continue stirring until wedges are coated
with glaze. Serve at room temperature
topped with orange rind strips. |
