PEA MASH
1 small
onion, finely chopped
3 cups shelled fresh peas (approx 1.2kg unshelled)
1/4 cup chicken stock
Cook onion,
stirring, in heated, oiled pan until
soft. Stir in peas; cook, stirring, for
2 minutes. Add stock and bring to boil;
simmer, covered, stirring occasionally,
for about 10 minutes or until peas are
tender. Blend or process pea mixture
until almost smooth.
Serves 4.
