CORN AND GINGER SOUP

This is fast food. It takes next to no time to make, and you'll want to lick the bowl.

1 tablespoon vegetable oil
1/2 cup finely sliced green onions
1 tablespoons finely sliced ginger
2 cups corn kernels, cut from cobs
1 litre chicken stock or water
1 tablespoon shao hsing wine
1/4 teaspoon white pepper
1 teaspoon sugar
1 teaspoon salt
2 tablespoons soy sauce

TO SERVE
2 tablespoons sliced green onions
Coriander (cilantro) sprigs
1 teaspoon sesame oil

Heat oil in a large saucepan over medium heat. Add green onions and ginger and stir-fry for 1 minute. Add corn and continue stirring for another minute. Pour in stock, or water, and bring to the boil. Season with wine, pepper, sugar, salt and soy sauce. Simmer for a further 5 minutes.

TO SERVE: Ladle into bowls and sprinkle with green onion and coriander, and drizzle with a few drops of sesame oil.

Serves 6 to 8.
