Chicken
There
are as many chicken dishes in the Caribbean
as there are cooks. Every household has
its chicken specialty. The recipes that
follow are a good example of the way Caribbean
cooks have taken inspiration from a variety
of cooking styles - curries from India,
stir-fried from China, roasts from England
- and given them their unique tropical twist.
