Lime Syrup
Preparation Time: 10 minutes (plus refrigeration
time) | Cooking Time: 25 minutes

This basic syrup can be used with ice-cream or fresh fruit. It goes well with coconut ice-cream, and is delicious poured over fresh papaya or mango.

1 lime
1/2 cup caster sugar
1/2 cup water
1/2 cup lime juice
1 teaspoon cornflour

Peel lime, avoiding the bitter white pith; cut rind into fine strips.

Combine sugar and the water in small saucepan; add lime rind, bring to a boil. Simmer gently, covered, 15 minutes.

Add blended juice and cornflour to pan; stir well. Simmer gently, uncovered, stirring constantly, 3 minutes or until mixture thickens and looks transparent; cool.

Refrigerate syrup 1 hour before serving.
