Seared Tuna Steaks with Tropical Salsa
Preparation Time: 20 minutes (plus marinating time) | Cooking Time: 18 minutes (plus standing time)

6 tuna steaks (900g)
2 tablespoons lime juice
2 tablespoons olive oil
1 small mango (300g), chopped finely
1/2 small papaya (325g), chopped finely
1 small fresh red chilli pepper, chopped finely
2 tablespoons lime juice, extra
1 teaspoon finely grated lime rind
1 tablespoon olive oil, extra
2 tablespoons coarsely chopped fresh coriander leaves

Place fish in shallow glass or ceramic dish; drizzle with juice and oil. Cover; refrigerate 2 hours, turning fish once during marinating time.

Combine mango, papaya, chilli pepper, extra juice, rind, extra oil and coriander in large bowl. Cover; refrigerate salsa about 1 hour.

Heat large frying pan until very hot; cook fish, in batches, 3 minutes each side. Transfer fish to a plate, cover loosely with foil; stand 5 minutes.

Serve fish with tropical salsa.

SERVES 6

SERVING SUGGESTION: Serve with plain boiled rice.
