Trinidad Fish Bake
Preparation Time: 10 minutes (plus marinating time) | Cooking Time: 30 minutes

1 cup plain yogurt
1 tablespoon curry powder
1 tablespoon desiccated coconut
2 shallots, chopped finely
2 cloves garlic, crushed
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup lime juice
3 teaspoons finely grated lime rind
4 halibut steaks (700g)

Preheat oven to moderate.

Combine yogurt, curry powder, coconut, shallot, garlic, oil, salt, pepper, juice and rind in shallow baking dish. Add fish, spooning yogurt mixture over fish to coat. Cover; refrigerate at least 1 hour.

Bake fish, uncovered, in moderate oven 30 minutes, occasionally basting fish with marinade.

Serve fish with lime wedges, if desired.

SERVES 4

TIP: If you prefer, use cod steaks instead of halibut.
