Trinidad Fish Bake
Preparation
Time: 10 minutes (plus marinating time)

1
cup plain yogurt
1 tablespoon curry powder
1 tablespoon desiccated coconut
2 shallots, chopped finely
2 cloves garlic, crushed
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup lime juice
3 teaspoons finely grated lime rind
4 halibut steaks (700g)
Preheat
oven to moderate. |

Combine
yogurt, curry powder, coconut, shallot, garlic,
oil, salt, pepper, juice and rind in shallow baking
dish. Add fish, spooning yogurt mixture over fish
to coat. Cover; refrigerate at least 1 hour.
Bake
fish, uncovered, in moderate oven 30 minutes,
occasionally basting fish with marinade.
Serve
fish with lime wedges, if desired.

TIP:
If you prefer, use cod steaks instead of halibut.
