Spiced Lamb Chops
Preparation Time: 10 minutes (plus marinating time) | Cooking Time: 50 minutes

1 1/4 cups orange juice
2 tablespoons aniseed, crushed
1 teaspoon garam masala
1 fresh red chilli pepper, seeded, chopped finely
1 tablespoon honey
1/2 teaspoon salt
2 tablespoons dark rum
8 thickly cut lamb loin chops (1.4kg)

Combine juice, aniseed, garam masala, pepper, honey, salt and rum in baking dish. Add lamb; turn to coat with marinade. Cover; refrigerate at least 1 hour, turning once.

Preheat oven to moderate.

Roast lamb, uncovered, in moderate oven 45 minutes, basting frequently. Remove lamb from dish; set aside in warm place.

Pour marinade into small saucepan, bring to a boil; boil, uncovered, until sauce has reduced by about half.

Pour sauce over lamb to serve.

SERVES 4

SERVING SUGGESTION: This dish is excellent accompanied by a cucumber and yogurt salad.
