Chargrilled Pork Chops with Herbs
Preparation Time: 15 minutes | Cooking Time: 16 minutes

1 tablespoon coarsely chopped fresh rosemary
2 teaspoons fresh thyme leaves
2 tablespoons coarsely chopped fresh flat-leaf parsley
3 cloves garlic
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 tablespoons olive oil
4 pork loin chops (800g)

Blend or process herbs, garlic, salt, pepper and oil until ingredients are well chopped and mixed.

Spread half of the herb mixture evenly on one side of the chops. Place chops, herbed-side down, in grill pan (or on barbecue); cook 8 minutes. Spread remaining herb mixture evenly on chops, turn chops; cook 8 minutes.

Serve with a mango or other fruit salsa, if desired.

SERVES 4

TIP: The pork chops can also be cooked under a grill. Cook chops herbed-side up in this case so that the herbed side faces the heat.
