Jerk Pork Chops
Preparation Time: 15 minutes (plus marinating time) | Cooking Time: 20 minutes
2 fresh red chilli peppers, seeded, chopped finely
4 tablespoons lime juice
2 teaspoons finely grated lime rind
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
2 tablespoons ground allspice
1 tablespoon chilli sauce
2 cloves garlic, crushed
4 pork loin chops (800g) |

Combine chilli peppers, juice, rind, spices, sauce and garlic in small bowl; mix well. Spread mixture over both sides of chops, adding a little olive oil to mixture if it is too dry to spread. Cover; refrigerate 1 hour or overnight.
Cook chops on barbecue (or in grill pan or under grill) 10 minutes each side, or until cooked through. Serve with grilled lime pieces, if desired.
SERVES 4
TIP: This jerk paste can be used with other meats, such as lamb. |
