Green Papaya Salsa
Preparation Time: 20 minutes

2 tablespoons lime juice
2 teaspoons dark brown sugar
1 teaspoon finely grated lime rind
1 medium green papaya (1kg), seeded, chopped finely
2 tablespoons finely chopped fresh coriander leaves
1 fresh red chilli pepper, seeded, chopped finely
1 medium red onion (170g), chopped finely
1 tablespoon olive oil

Place juice in large bowl, add sugar; stir until sugar is dissolved. Add remaining ingredients; stir well. Cover; refrigerate until cold.

Serve salsa with grilled fish or barbecued chicken, if desired.
