Chili Crab Peppers
Preparation Time: 20 minutes | Cooking Time: 5 minutes

3 large green peppers (1 kg)
3 cups cooked crab meat
4 hard-boiled eggs, chopped finely
2 small fresh red chilli peppers, seeded, chopped finely
2 tablespoons finely chopped spring onions
1 tablespoon finely chopped fresh flat-leaf parsley
2 teaspoons finely grated lemon rind
4 tablespoons lemon juice
1 cup mayonnaise
1/2 cup plain yogurt

Halve green peppers lengthways, remove seeds and membranes. Place pepper halves in large saucepan of cold water, bring to a boil; simmer gently, uncovered, 2 minutes. Drain pepper halves, rinse immediately in cold water; pat dry with paper towel.

Combine crab, egg, chilli pepper, onion, parsley, rind, juice, mayonnaise and yogurt in large bowl.

To serve, place crab mixture in pepper halves.

SERVES 6

TIP: If you prefer, use tinned or frozen crab instead of fresh crab.
