Tropical Fruits in Lime Syrup
Preparation Time: 15 minutes | Cooking Time: 25 minutes (plus cooling time)

2 cups sugar
2 cups water
1/4 cup lime juice
1/2 rockmelon, sliced
1/2 honeydew melon, sliced
1 small papaw, sliced
1 small pineapple, sliced
385g lychees, seeded

Combine sugar, water and lime juice in pan, stir over low heat without boiling until sugar is dissolved. Bring to the boil, boil rapidly, uncovered, without stirring for about 20 minutes or until syrup is thick; cool, refrigerate.

Pour syrup over fruit; mix gently.

Serves 4.

Store
Can be prepared 2 days ahead. Store, uncovered, in refrigerator.

Per serving: 1.3g fat, 682 calories.
