Fruit Salad with Savoury Coconut Dressing
Preparation Time: 20 minutes (plus refrigerating time)
1 medium apple (150g)
1 medium banana (200g)
1/2 medium papaw (500g)
1 cup coconut milk
1 small fresh red chili, chopped
1 tablespoon chopped fresh coriander leaves
2 tablespoons lime juice
1 tablespoon fish sauce
1/4 cup peanuts
6 cos lettuce leaves
Cut apple in half, remove core, cut into thin slices; slice banana; chop papaw. Combine coconut milk, chili, coriander, juice and sauce in bowl. |

Combine fruit and peanuts in bowl with coconut milk dressing, mix well; cover, refrigerate 1 hour before serving. Serve over lettuce.
Serves 4.

Best made 1 hour ahead. Store, covered, in refrigerator.
